The common sunflower (Helianthus annuus), which is grown as an ornamental because of its magnificent size, beautiful flower buds, and delicious seeds, is one of roughly 70 species of annual and perennial flowering plants of the genus Helianthus.
De-hulled sunflower seeds can be consumed raw or roasted. The seeds with stripped husk eat as a snack food, called confectionery sunflower seeds. Sunflower seed brittle is produced by embedding the kernels in hard sugar candy and roasted ground seeds are used to make a type of halva.
Sunflower seeds mainly contain monounsaturated and polyunsaturated fats, principally linoleic acid. They have a chemical that eases blood vessel tension and lowers blood pressure. Sunflower seeds' magnesium content also lowers blood pressure. The seeds also contain phytosterols, which may help to decrease blood cholesterol levels. Additionally, several research articles indicated that sunflowers lower diabetes because of the chlorogenic acid found in plants. According to those, compared to a healthy diet alone, those who eat 1 ounce (30 grams) of sunflower seeds every day may reduce fasting blood sugar by roughly 10% within six months. Sunflower seeds contain flavonoids and other plant components that decrease inflammation and cancer.
